Mezcal Pulquero from Mundana Mezcalería

Mezcal Pulquero might just be a mezcal you’ve never heard of. Mezcal is a spirit distilled from agave, there are 200 known species of agave with around 40 to 50 of them can be used for mezcal production. Approximately 80-90 percent of mezcal production comes from agave angustifolia, or by common name, Espadín.

Mezcal Pulquero comes from the agave that is also used in the production of pulque. Pulque is the fermented agua miel or “honey water” that is extracted from the heart of the maguey. Keep in mind, Mezcal pulquero is not to be confused with destilado de pulque, which is a distillate of pulque vs. the mezcal which is the agave hearts procesed for mezcal.

There are 2 species of agave commonly used for the production of pulque, agave Salmiana and agave Americana. Agavae Americana even has 2 variations, Americana Pulquero azul and Americana Oaxacensis which is used for mezcal and you might know it as “arroqueño”. They are often known as Giants because of there large size at maturity.

Agave Americana
Cultivated in the state of Oaxaca, previously used to make pulque, also used to distill mezcal.

Domesticated in the state of oaxaca, in Centro, Cuicatlan, Ejutla, Huajuapan, Ixtlán, Nochixtlán, Ocotlán, Sola de Vega and Tlacolula.

Mundana Mezcalería Mezcal Pulquero

Mezcalería Mundana is located inside the Barrio Alameda, on the opposite end of the Museum of Bellas Artes in the parque Alameda in centro. They have a wide selection of different varieties of mezcal, sold under their label “Mezcal de La Casa” which is the house mezcal. They work with a variety of maestro mezcaleros and often have a limited supply mezcales, like the Mezcal Pulquero we’re trying today.

Tasting

Aroma of tart, green apples and pairs, with a short warming sensation. Mouth feel is initially is picant, like bell pepper, with a pleasant generous alcohol. FLavors of sweet citrus, mandarin and naval oranges. There are sweet notes from the roasted agave. The after taste lingers a few seconds and coats the mouth with a medium body. The tasting triggers new aromas like florals. With a very subtle smokiness.
