Raicilla Makes its Presence at Gastronomic Week of Puerto Vallarta in Mexico City

This Thursday afternoon the Gastronomic Week of Puerto Vallarta was inaugurated in Mexico City, which will remain until next Sunday, August 29 at the Mercado del Carmen in San Ángel, offering all city dwellers the chance to enjoy the most representative gastronomy of the “green pearl of the Mexican Pacific”, with an extensive menu of typical Vallarta dishes and drinks.

Raicilla, a distilled agave spirit with Jalisco Designation of Origin (2019) is one of the distillates that best defines the traditions of Puerto Vallarta. So during Gastronomic Week in Mexico City the presence of Raicilla was mandatory, and what better way than with one of the most important producers in the region: Hacienda El Divisadero, Vallarta’s pride with Gold quality worldwide (TOP World Spirit Awards France 2021 edition and recently named Distillate of the year in the framework of the New York International Spirits Competition 2021). They will present their “Las Peñitas” cocktail, prepared with pineapple, chipotle syrup, and lemon.

Mexico City and Puerto Vallarta have the recognition of being the two main cities in the country for gastronomic diversity, so this alliance represents excellent news for those who wish to taste authentic Vallarta dishes in the great Mexican city.

Restaurants from Puerto Vallarta, Offering their Best Recipes

Restaurant Icú, recognized as the “Best New Mexico Restaurant” by the Food & Travel Readers Awards (2019) offered its drink specialty, the Puerto Vallarta Shine, based on raicilla, watermelon, strawberry, cassis cream, natural syrup, lemon, and cranberry juice. As well as the special recipe, ancho chili taco, stuffed with asadero cheese, roasted garlic sauce, coriander, and purslane salad.  

La Tienda Grande, is positioning itself as one of the most avant-garde restaurants in Puerto Vallarta, also provided two recipes: Octopus Stew, which is prepared with cooked octopus, red pepper, coriander, tomato, onion, garlic, and white wine. In addition, the Taco de Mar y Mar, made with nixtamalized Creole corn tortilla, clean snapper fillet, onion, paprika, coriander, olive oil, butter, black pepper, and serrano pepper.

Restaurant Lamara, a specialist in sea-food dishes, contributed to this Gastronomic Week the recipe for its Ceviche Bahía Tostada, with pieces of tuna marinated in lemon, accompanied by avocado, cucumber, onion, peanut, coriander, sesame and sauce. 

Mariscos Tino’s, considered a gastronomic benchmark in Puerto Vallarta, offered one of the most representative dishes of the region, the Pescado Zarandeado, made with red snapper split opened, cooked on firewood with a delicious house sauce, seasoned with achiote, chili peppers, and spices, and accompanied by sauces and tortillas.

Restaurant La Palapa has one of the most privileged views in all of Puerto Vallarta thanks to the fact of its location in front of the sea and the iconic Muelle de Los Muertos. Participating this week at the Mercado del Carmen, they contribute its dish “Camarones Coco”, which is prepared with mango and ginger sauce, tropical fruit relish, corn, coriander, and mashed potatoes.

Verana Restaurant, one of the most innovative in Puerto Vallarta, provided the recipe for its Tuna with Esquite: medallion of tuna seared and marinated in chili paste, with a topping of corn grains cooked and sautéed with pumpkin seed, sunflower seed, accompanied by a creamy dressing of capers and onion, decorated with habanero pepper and avocado paste.

Gaby’s Restaurant Bar, during this week full of flavor in Mexico City, will offer diners the opportunity to taste the incomparable “Cuala de Coco”, considered one of the most traditional desserts in Puerto Vallarta. This recipe is prepared with whole condensed evaporated milk, sugar, coconut oil, nixtamalized corn, cinnamon, coconut pulp, and jam.

Mercado del Carmen is the official headquarters of the Puerto Vallarta Gastronomic Week in Mexico City, thanks to the restaurants: La Cevichería, Ponchos, Pizzas Caimán, El Mayoral, El Caminito, Díaz de Café and Ozna Bar, where Vallarta flavors can be tasted by diners.

Puerto Vallarta’s gastronomic scene has been recognized not only for its award-winning local and international chefs but also for the authentic flavors of the sea and mountains, which generate an immense range of possibilities that range, from traditional food stalls to more elaborate signature dishes.

Every year this important tourist destination is the venue for gastronomic events of great relevance such as Restaurant Week that will take place from September 15 to October 10 with the participation of 22 restaurants from Vallarta, the Vallarta Nayarit Gastronomic from October 28 to 31, bringing together the best of gastronomy in the region; and the International Gourmet Festival from November 12 to 21 with renowned chefs from around the world.
